ON THE NOSE:Tropical, Citrus and Stone Fruit (Apricots). Spice. Honey (Aged)

ON THE PALETTE: Dry / Acidic

PAIR WITH: Rich Fish and Creamy Chicken. Balances strong pungent cheeses and sweet desserts.

Vinification: natural ferment, 10 months maturation in tank , no wood maturation, secondary bottle fermentation, bottles tempered 30 months on lees, zero dosage

Winemaking process

The vines cropped a sustainable yield with an almost unheard of 4,5 tons per hectare. As in previous vintages, all the fruit was hand harvested in the cool of the morning and the glistening gold green clusters were whole-bunch pressed, settled for 3 days and after racking allowed to ferment with only the assistance of the native yeasts.

Secondary bottle fermentation was initiated by the addition of yeasts with a liquor de triage and the wine crown capped, thereafter 30 months passed before disgorging.  2015 performed to the best base I have ever tasted in the cellar, and it was the first time I could market out an opportunity to test Chenin Cap Classique on lees ageing.

The lady winemaker does zero dosage – a practice preferred as this allows for the truest expression of the site. In May 2018, a mere 1770 btls (750ml) and 193 btls magnum (1.5L) of the first lot from the 2015 vintage were disgorged, hand labeled and ready for our beloved champagne lovers, enthusiast and avid followers.
