About the Winery

Spier is one of the oldest wine farms in South Africa with a recorded history dating back to 1692. Spier’s wines are among the most awarded in South Africa. Visitors to the Stellenbosch-based farm can enjoy these paired with wholesome delicious food – made with ingredients sourced either from the farm or trusted, nearby farmers. The Spier Hotel and meeting facilities offer inspiring winelands getaways in the tranquility of nature.

Sustainability is woven through every aspect of our business. On our organically-certified farm, free-roaming livestock and chickens are reared in pastures without the use of antibiotics or hormones, while fruit and vegetables are grown without artificial fertiliser or pesticides. Extensive tracts of alien vegetation have been removed, and more than a million indigenous plants replanted. 100% of black- and grey-water and more than 98% of solid waste is recycled. Our water conservation and boosting of biodiversity saw Spier recognised as one of more than 40 WWF Conservation Champions.

Spier has also been recognised by various other external organisations – including Fair Trade in Tourism (FTTSA), and is a member of the Wine Industry Ethical Trade Associations (WIETA), promoting and adhering to an ethical code of conduct to transform the agricultural sector. The Spier winery is FSSC 22000 and organically-certified, and in 2019 became the first winery in the world to receive Control Union Vegan Standard certification by the accredited certifying body Control Union. Both the cellar and the farm follow the Integrated Production of Wine (IPW) criteria. www.spier.co.za

Winemaking process

Grapes were harvested early morning, gently crushed and lightly pressed at the cellar, where skin contact was allowed to create the perfect colour. Only the free-run juice was drained off to settle overnight. The Chardonnay and the Pinot Noir were fermented together in stainless steel tanks under controlled temperatures between 12º and 14°C.

Cellaring

This entry-level wine is meant to be enjoyed within 1 – 2 years of release.
