About the wine

Dark deep crimson colour. Aromas of blueberries, ripe plums and a faint spiciness towards the end. Full velvety mouth feel with hints of berry compote, mulberries and ripe plums. This is a well structured wine with rounded tannins balancing out opulent fruit and a long lingering finish.

Winemaking process

Hand-picked, destemmed and hand sorted before going into tank. 3-5 day cold soak with Carbonic maceration. Thereafter open tank fermentation with punch downs every 3 hours for the first 3rd of fermentation. Thereafter 3 pump overs daily, average fermentation period until dry is 14 days. Post macerated for 2-4 weeks. Melolactic Fermentation in barrel, matured for 12 months in Medium Toast, tight grain 225l French.

Cellaring

Rainbow’s End Merlot is bottle matured on site for 22 months prior to release. The wine is ready for consumption upon release but can be cellared for optimal drinking between 4-7 years
