About the wine
Aromas of dark cherry, black plum and cassis followed by a touch of of sage, mint and thyme. Full bodied, the pallet offers layers of complexity with soft spice, dark fruit ending with a lingering minty mulberry finish. Soft well balanced tannins.

Hand-picked, destemmed and hand sorted before going into tank. 3-5 day cold soak with Carbonic maceration. Thereafter open tank fermentation with punch downs every 3 hours for the first 3rd of fermentation. Thereafter 3 pump overs daily, average fermentation period until dry is 14 days. Post macerated for 2-4 weeks. Melolactic Fermentation in barrel, matured for 22 months in Medium Toast, tight grain 225l French.
This wine is bottle matured on site for 12 months prior to release. The wine is ready for consumption upon release but can be cellared for optimal drinking between 5-10 years
